- In a large frying pan/wok, put on med/low heat.
- Pour oil on the pan like you were going to make a bunch of eggs.
- Spread the rice over the pan, not too thick, you can do more than one batch--I like my rice more fried and less mushy. Let it saute a little
- Drizzle soy sauce and Mae Ploy's sauce over the rice (not too much, you can add more to taste later)
- Crack eggs over rice, spaced evenly throughout the pan. Let them firm up a little/edges turn white-ish before mixing them in--I like the flavor better this way *stir occasionally to prevent anything from burning)
- Shake salt and pepper over rice (not too much, you can add more to taste later)
- Pour the carrots in and mix together
- When the carrots are cooked, but still slightly crunchy, add broccoli & mix again
- Put lid on, and let everything steam together on low heat, mmmmm seasonings having a party!
- When everything is just cooked, add more salt/pepper/sauce to taste and enjoy! (I like my veggies still a little crispy, mushy veggies belong on cafeteria trays--then to the garbage)
Serve with:
Chicken sauteed and cooked in Mae Ploys, red pepper, salt, pepper, etc.
Pot stickers
