Fried Rice (extra yummy flavor)

Fried Rice (extra yummy flavor)

4 cups rice (preferrably cooked the night before)
5-6 eggs
Oil
Soy sauce
Mae Ploy's
Pepper
Salt
4-5 Carrots chopped
8-10 oz broccoli (fresh/just barely not frozen)
(you can really add any veggies you like. Onions, celery, peas, corn, all are delicious!)


  1. In a large frying pan/wok, put on med/low heat.
  2. Pour oil on the pan like you were going to make a bunch of eggs.
  3. Spread the rice over the pan, not too thick, you can do more than one batch--I like my rice more fried and less mushy. Let it saute a little
  4. Drizzle soy sauce and Mae Ploy's sauce over the rice (not too much, you can add more to taste later) 
  5. Crack eggs over rice, spaced evenly throughout the pan. Let them firm up a little/edges turn white-ish before mixing them in--I like the flavor better this way *stir occasionally to prevent anything from burning)
  6. Shake salt and pepper over rice (not too much, you can add more to taste later)
  7. Pour the carrots in and mix together
  8. When the carrots are cooked, but still slightly crunchy, add broccoli & mix again
  9. Put lid on, and let everything steam together on low heat, mmmmm seasonings having a party!
  10. When everything is just cooked, add more salt/pepper/sauce to taste and enjoy! (I like my veggies still a little crispy, mushy veggies belong on cafeteria trays--then to the garbage)
Serve with:
Chicken sauteed and cooked in Mae Ploys, red pepper, salt, pepper, etc.
Pot stickers
Egg rolls
