Aunt Sherri’s Everyday Pimento Cheese

½ lb extra sharp white cheddar
½ lb extra sharp orange cheddar
7 oz jar pimentos (the finely chopped ones, don’t drain)
1 tsp black pepper (more to taste)
⅔ cup mayonnaise (Duke’s is best)
1-2 tbsp vinegar
1 tsp sugar

Grate cheese, stir all ingredients together with a fork
Chill at least 2 hours to let flavors develop.
Serve with crackers or use as a filling for sandwiches

Keeps tightly covered & chilled ~4 days
Makes about 3 cups

  1. I'm excited to try this! I bought pimento cheese from a store a long time ago and it was GROSS. I know Aunt Sherri's is good :)
