Aunt Sherri's Chocolate Chip Cookie

Sherri's Chocolate Chip Cookie Recipe

1 Cup sugar
1 Cup firmly packed brown sugar
1 Cup Butter, softened

2 Eggs

1 Tablespoon vanilla

2 Cups all-purpose flour
1 1/2 - 2 cups uncooked quick-cooking oats
1 teaspoon baking soda
1/2 teaspoon salt

About 2 Cups of Chocolate Chips (Aunt Sherri uses semi-sweet Ghiradelli, and I think this is key)


Heat oven to 350°F.
In a large mixing bowl, cream the butter, then add sugars and mix well.
Add eggs, vanilla, and beat until well mixed.
In a blender slightly ground about 2 cups of oats.
Pour oats in small bowl and add flour, baking soda, and salt.
Mix together and then add to butter mixture.
Beat until well blended.
Add chocolate chips and stir them in by hand.

Cookie dough bake best if refrigerated at least 6 hours or overnight.

Drop by tablespoons onto engrossed cookie sheet. (sherri slightly rolls the cookie dough in her hands to make loose balls and cooks them that way.) Cook 10-12 minutes or until lightly golden brown.

If you use Convection oven. Heat to 350°F and cook for 8 minutes and 20 seconds.
