Prep: 25 min. Bake: 15 minutes per batch.
Oven: 325 Makes: about 48 cookies
1 cup butter, softened
1/2 cup powdered sugar
1 tablespoon water
1 teaspoon vanilla
2 cups all-purpose flour
1 1/2 cups finely chopped pecans
1 cup powdered sugar
1. Preheat oven to 325. Beat Butter with an
electric mixer on medium to high speed for
30 seconds. Add the 1/2 cup powdered sugar.
Beat until combined, scraping sides of bowl.
Beat in water ad vanilla until combined. Beat in
as much of the flour as you can with the mixer.
Stir in any remaining flour. Stir in pecans.
2. Shape dough into 1-inch balls or 2x1/2 inch
logs. Place 1 inch apart on an ungreased cookie
sheet. Bake about 15 minutes or until bottoms
are light brown. Transfer to a wire rack and let
cool. Place the 1 cup powdered sugar in a plastic
bag; gently shake cooled cookies in bag to coat.
My super easy version of 2. Shape dough into
1-inch balls or into 2x1/2 inch logs. Roll the balls
or logs in the powdered sugar (like you do with
snicker-doodles). Place 1 inch apart on an
ungreased cookie sheet. Bake about 15 minutes
or until bottoms are light brown.
